Isn’t it funny how everyone has a memory of school lunches and having lunch lady peanut butter bars?! Or rice crispy peanut butter bars? We would get them like once a month on a Friday and I would looks SO forward to it, I made sure I wasn’t going to be absent on a glorious peanut butter bar day! This recipe is the one I go to every time I need a fast, crunchy and GLUTEN FREE treat! It has everything; chocolate, peanut butter, crunch, creamy, it’s just good! Best part of it, its easy and fast! My only advice for these bad boys is to eat them the day you make them, the rice crispies can lose their crunch and might not taste that great the next day, but I honestly don’t think you are going to have that problem. Good news is that they are super fast so its something that is easily made the day of. Everyone goes crazy over them!

Crunchy Peanut Butter Bars

  • 1 1/2 cups creamy peanut butte (my favorite here)
  • 6 tablespoons butter, softened, not melted
  • 1 1/2 cup powdered sugar
  • 3 cups crispy rice cereal
      • 2 cups semi-sweet chocolate chips I love these ones
      • 1 tbsp. peanut butter

      Cream peanut butter and butter together then add the powdered sugar, lastly the rice crispies. Transfer to a lightly sprayed or buttered 9×13 cake pan, place in the freezer for 5-10 minutes. Melt chocolate and peanut butter over a double broiler or heat in the microwave until melted and smooth, spread over the crispy crust. Refrigerate for at least half an hour to an hour before cutting them into squares. If you can wait that long….
      *you could also use half graham crackers and half rice crispies but that makes it gluten, still great tho.
